How long will a bottle of champagne keep in the fridge?
I opened a bottle of champagne for Christmas. Surely it'll still be OK to drink for New Year's, but what about after? How long will it keep in the fridge? (I'm not a big drinker, so I won't finish it off anytime soon.)

You already opened it. The next day it will already be half flat if you didn't re-cork it. Even if you did re-cork it, within 4-5 days, it will have lost much of it's carbonation. I don't think your champagne will be very good on new years eve; sorry to say.
In the future, buy splits (half bottles) of champagne. And, leftover champagne is very nice in some cream sauces. Saute some chicken or veal and deglaze the pan with the champagne and reduce to about 1/4 of it's original volume. Add a little stock and reduce again to about 1/4 it's volume. Add some cream and throw in some herbs and you have a nice sauce.
