You are on the right track.
Keep in mind, soaking the cut fruit, apples or pears does not preserve the fruit. It just keeps the fruit from oxidizing and discoloring (turning brown). You can put the juice of one lemon into about a quart of water, or even use lemon juice concentrate to do the job.
